Dr. Bill will walk you step-by-step through the process of fermenting dairy products, making butter and stretched curd cheeses (Quesillo & Ricotta). He’ll cover everything from sourcing appropriate milk, fermenting and culturing to making the brine, to stretching the curd plus he’ll weave in stories of working with traditional groups who ferment dairy around the world.
Includes ingredients, coffee breaks and a light lunch. NOTE: Prices in Mexican pesos.
El Dr. Bill nos guiará paso a paso a través del proceso de fermentación de productos lácteos, elaboración de mantequilla y quesos (mozzarella y ricotta). Cubrirá todo, desde la leche adecuada, la fermentación y el cultivo hasta la elaboración de la salmuera y el estiramiento de la cuajada, además de entretejer historias de grupos tradicionales que fermentan lácteos en todo el mundo.
